Add realistic weathered panels to your aircraft models

As a fan of U.S. Army Air Force World War II aircraft, I've modeled more than my share of olive drab and neutral gray camouflage schemes. However, I found most of those models somewhat disappointing when finished. Though I used normal weathering techniques, their monotone olive drab finishes lacked depth and left them looking like, well, plastic models. How could I make them look more like miniature aircraft?
